Making a server the main domain mail server?

Hello,

I recently set up a new mail server for mchgroup.org, after our old one
died. I inherited this system a few months ago, so I am not completely
familiar with everything on it, and I am fairly new to configuring mail
servers. I am using sendmail as the MTA, with Cyrus for IMAP mail
delivery. Everything is working okay, except that mail sent to
username@mchgroup.org is disappearing into a black hole. Email sent
straight to the server - username@list.mchgroup.org - goes through.
The MX record for the domain points to gaia.mchgroup.org, which it
always has. Nothing on gaia has been changed. Is there anything on
the new server that I have to configure to get it to be the default
mail server for the domain?

Your description doesn't match reality:

mchgroup.org. 7200 IN MX 10 MAIL.mchgroup.org.

MAIL.mchgroup.org. 7200 IN A 141.161.111.122

mail.mchgroup.org points to gaia.ncemch.org:

mail.mchgroup.org has address 141.161.111.122
122.111.161.141.in-addr.arpa domain name pointer gaia.ncemch.org.

Now, I'm thinking the easiest way to fix this is to just change the MX
record for mchgroup.org; however, because it was set up to work with
gaia before, I'd kind of like ot keep it that way, so if there's
something I can change to do that, I'd like to. Any ideas?

mchgroup.org. 7200 IN MX 10 MAIL.mchgroup.org.

(I am repeating this since you didn't quote any of my previous response)

First decide where you want mchgroup.org mail to be sent.

- If you want your mail to go to the server at 141.161.111.122, do not touch
the MX record. Troubleshoot your mail server configuration instead.

- If you want your mail to go to the server at 141.161.111.77, set the MX
record to list.mchgroup.org. Also configure that server to understand that
mchgroup.org is local.

- If you want your mail to go somewhere else, find (or create) a domain name
which resolves to the IP address for the host/interface in question. Then
put that domain name in your MX record. Also configure that server to
understand that mchgroup.org is local.
