I think you meant "Reply-To:" header.
In most configurations, you'd have to hack sendmail.cf to allow that,
and then use formail that comes with procmail to do that for you.
Read the man pages for formail.

You may be able to set this up in the environment. For example, put
REPLYTO=user@example.com
at the top of your crontab, or use the shell equivalent in scripts.
