Question first, do you want to have the two setup completely separate?
In this case you would need to start eudora with a different location as
its directory. During the first access, eudora will create the regular
mailboxes and will prompt you to enter the information for the account.

With IMAP deleting the old personality should remove the IMAP mailboxes
that are associtated with the IMAP personality.
