I am not aware of a specific "How To" book regarding Filemaker,
but "Filemaker: the missin manual" is very simple and straightforward
in my opinion.

If you're looking for very simple things such as the one listed above,
I don't the which book you choose, is too important. The basics of FM
haven't changed much in the past 5 (++!) years so any old FM book you
find used/cheap would probably help you.
Also, sorting by a column would most likely be done in a "Table" layout
which means you can just click the heading and it will sort
automatically. Try clicking again or right-clicking as well.

FileMaker Desk Reference Scrpits and Calulations
The FileMaker Bible comes in handy as well.
Frankly though... the best teaching I've found is the Lynda.com
tutorials w/ Chris Ippolete [sic]
if you know where to find them you can get them very very easily..

PS - the script to sort a column is pretty easy. You make a new
script, keep it in the original layout (default setting) and just
click on sort records and you can specify the sort or allow the user
to choose by dropping a pause script command after the sort.
