What are the important columns for extended logging ?

We have the W3C extended log file format for our IIS 6 enabled and we have
all the columns selected.
Our daily log file sizes are huge obviously in like multiple Gigs.
So I wanted to know what are some of the important columns that I need to
collect. I want to collect all the info, but at the same time, not knowing
much about IIS, I want to make sure I enable the most important columns.
Can someone assist ?

You need to collect whatever information is important to you - only you can
decide that.
Information like the server port (which will typically be 80 or 443)
probably isn't necessary. Additionally, the client port probably isn't
necessary either.

Do you know if adding or removing columns for logging requires that we reset
IIS ? Or is it an online operation ?

I don't believe you need to restart IIS. You'll just get an additional
header lines in the log file.
