fixed it!

i was looking too much into the php side of things, it wasn't encoded
at all. all the variable was was the code of the image section of the
rtf file.

So all i had to do was edit the rtf with a new image, work out which
bit of the rtf code was the image, and copy it over to the php file,
replacing the variable.
